SHO-KICHI, duck soba    


Hi, how is everyone?


What kind of food do you think of when you hear traditional Japanese food?

You may think of shabushabu, sukiyaki, tempra and sushi.
How about soba?

Soba is a noodle which made of buckwheat flour and wheat flour.
It's healthy and good for your body.

This restaurant is famous for duck shabushabu.

The best way to taste shabushabu is to dunk a thin sliced meat in a boiled soup just for few seconds.

I didn't have shabushabu this time but had duck soba.






Vegetables cooked separately but served in a same bowl for an appetizer.
Mustard is on the side.





Unique potato salad which I liked the most of all food I had this time.

Iburigakko, smoked Japanese white horse radish pickels, and lots of  black paper are used in this potato salad.

Iburigakko is a popular product of Akita Prefecture but is not usually used in a potato salad.

It definitely tastes good with sake! ( I don't drink though)





This is the main dish of the day.
Kamo(duck) soba.

Thin sliced duck meat on top of hot soba as well as green onion and Japanese honewort.
(Thin sliced but not as thin as shabushabu. Meat sliced for shabushabu is much thinner!)
